Evoo Oil Farm San Leolino


Our EVOO comes from olives grown organically on our farm.

Its quality level is mainly based on the following elements:


  • the terroir and the altitude which guarantee very low acidity levels and a strong presence of antioxidants.
  • the varieties used that define its flavour and spiciness.
  • the fact that the olives are picked when they are not yet fully ripe and pressed within a few hours
  • the pressing methods: the use of cutting-edge machinery, with cold pressing and controlled contact with oxygen and without the addition of water during the process, thus preserving all the antioxidants and other healthy elements. This method allows to obtain an intense, spicy and not bitter olive oil.
  • the fact that it is filtered, which allows the freshness and quality level of the newly made product to be preserved for longer!
  • the stainless steel preservation system, in the absence of oxygen, reducing the oxidation process.

  • Variety: Frantoio 70%, Moraiolo 15%, Leccino 15%
  • Altitude: 400-500 meters above sea level
  • Soil type: limestone and clay with rocks
  • Age of trees: 20-70 years
  • Number of trees on the estate: 4000
  • Harvest period: mid-October - early December
  • Harvesting method: Manual from the plant, in small crates, to preserve the olives intact
  • Crushing: within 6 hours of harvesting, in our estate's mill,
  • Storage system: in stainless steel vats
  • Tasting notes: Intense on the nose, with notes of artichoke and cut grass (depending on aging). Delicate and pleasantly spicy on the palate.
