Panzanello Chianti Classico Riserva is composed mainly of Sangiovese with a percentage of Cabernet. A wine with a bold and decisive character that can gain more balance and consistency over time.
The Caccia al Palazzo wine by Tenuta di Vaira is a Bolgheri Rosso DOC, produced with Cabernet and Merlot, the vines that create the great wines of the Tuscan coast. It is a versatile, medium-bodied wine, to be drunk young with a balanced and rounded taste and intense aromas, especially fruity, with the characteristic spicy and balsamic nuances of this denomination. In Bolgheri, the grapes ripen benefiting from a Mediterranean climate, cooled at night by the breezes that are always present on the vineyards.
The 100% Vermentino grapes are hand-selected and fermented at a controlled temperature in steel tanks, where the wine remains for a period even after the end of fermentation before bottling.
The rosè expression of the Caccia al Palazzo line of Tenuta di Vaira comes from the vineyards located at the foot of the Rocca di Castiglioncello, in the suggestive panorama of Bolgheri.

Grape Variety: Sangiovese
Vineyard Information: Planting density of 5000 vines per hectare. Heavy clay (30%). Altitude 250 m. Single guyot pruning method, which guarantees a yield of approximately 30 hl per hectare.
Vinification: In stainless steel tanks for a period of approximately 8 days.
Maturation: It matures for 6-8 months in large oak barrels of 25 or 50 hectolitres.
Description: Chianti Classico Guado Alto is a company cru, obtained with rigorous pruning and consequent lower yields in the vineyard to have more concentrated grapes. It aims to represent a soft and rounded version of the vintage Chianti Classico.
Tasting Notes: The colour is bright ruby. On the nose, wild berries stand out together with tobacco leaves and a spicy touch of cloves. On the palate, it has great enveloping and fruity intensity. The tannins are absolutely velvety, and the finish recalls blueberry juice.
Pairings: It goes well with roast red meats and mature cheeses.

Production Area: Castello Vicchiomaggio, Greve in Chianti
Grapes: Sangiovese, Cabernet Sauvignon and Merlot Vineyard Information: Planting density of 5,600 vines per hectare. Heavy clay (30%). Altitude 255-265 m. Single Guyot pruning method, which guarantees a rather low yield. Yield: 52 hl per hectare
Vinification and Maturation:
Vinification: In small stainless steel tanks (50 hl), which guarantee maximum contact of the skins with the must, for a period of about 16 days. Maturation: The wine matures for two years in new French oak barriques from two different cooperages. It then remains in the bottle for about seven months before being released for sale.
Description: Ripa delle More was born as an innovative wine, outside the box and specifications. It has changed appearance over the years to arrive at its current declination, in which Sangiovese (about 50%) meets Cabernet Sauvignon and Merlot. It is a rich wine, with a modern taste, that does not forget its Tuscan territorial roots. Tasting Notes: The colour is impenetrable ruby red. It has exuberant aromas, mainly balsamic and fruity, reminiscent of mint, blackcurrant and blueberry, but also evolves with hints of dark chocolate, vanilla and juniper. The taste denotes fullness but, above all, manifests great class. The tannins are extremely smooth and blend with the fruity taste of blueberry. The finish in the mouth is very persistent, with pleasant spicy notes.
Pairings: With its class, it pairs well with elaborate meat dishes such as stews, braised meats and casseroles.

Vinification and Maturation:
Vinification:
Fermentation in small stainless steel tanks (50 hl) ensures maximum contact of the skins with the must; maceration lasts at least 15 days.
Maturation:
The wine initially matures in second-passage barriques (used on the farm) and continues in large barrels for a total period of 18 months. Finally, it is refined in the bottle for another four months before being marketed.
Description: Riserva Agostino Petri comes from the grapes of a single vineyard with very low yields. It is a structured and complex wine that can evolve in the bottle for years.
Tasting Notes:
It dresses the glass in ruby red with garnet red nuances. On the nose, it releases a wealth of evolved fruity notes and sweet spices, almost reminiscent of a chocolate praline filled with raspberry syrup and candied cherry. In the mouth, it is warm and very enveloping, thanks to soft tannins. It has excellent balance and a finish of jammy fruit.
Pairings: In addition to roast red meats, it can also be appreciated with mature cheeses.
A perfect companion for tasty traditional dishes and also excellent as a wine to enjoy in good company.
Grapes: 50% Cabernet Sauvignon – 40% Merlot – 10% Syrah
Origin: Bolgheri – clayey, marble, and sandy soils – 5,600 plants/ha – yield of 85 quintals/ha.
Fermentation:
Cold maceration for a few hours, followed by spontaneous fermentation with native yeasts for 25 days at 26–28°C. Spontaneous malolactic fermentation.
Ageing:
Six months in 225-litre French oak barriques, medium toasted, third and fourth passage. It then rests in the bottle for six months. No filtration to preserve all its characteristics.
Visual Examination: Intense colour.
Olfactory Examination: Notes of vanilla with an intriguing aroma.
Tasting Notes:
A touch of acidity on the palate, making it easy to drink.
Food Pairings: Ideal as an aperitif, paired with cold cuts and grilled red meats.
